#87 inAfter reviewing this book I was a bit disappointed. I have been making Ebelskivers for many decades and I was hoping this book would teach me something new. I found this book to be thin and focused on some alterations of recipes but no real fundamental information. First, The Aebleskivers do flatten slightly once cooled but not too much. They are a cross between a small jelly filled doughnut and a pancake. Seriously delicious. And its so easy to eat a huge pile of them at once. To up the extra jammyness ( probably not a real word but I like it) I also made a syrup with the four fruits jam. I added in some maple syrup and orange juice and heated it up. I could have eaten that with just a spoon. SO good!A beloved treat in their native Denmark, I made the basic batter twice and already tried experimenting by adding ice cream fudge topping as the filler on the second batch. It worked out great.The Ebelskiver are to die for and the batter is so simple to make at home. I understand why someone called them "Evil Skeevers"!, didn't work so well) or using butter knives to flip them. I used the two thin spatulas ( about 1/2′ wide) and it worked great.
