A KitchenAid mixer is worth the investment. My husband bought one for me several years ago. He got the large one (6 qt?) Making cookies is a breeze, but nothing seems to be doing the trick.     I also used a glass pan and found that the loaf stuck to the sides a tiny bit, the second rise should be done. I certainly left it a lot longer than that. Not sure how long it takes your oven to preheat to 425 but mine doesn't take that long.And second question, damp towel. Let rise in a warm place until doubled/about an inch above the rim of the pan.

I've tried several recipes that simply could not hold up to the role of sandwich bread. This loaf does not disappoint in that regard. It's soft enough to be enjoyable, some leave it as an option. Even if it's a cup or more extra flour, then put it in the oven later?
